Melíosa Bracken is the Community Education Facilitator for City of Dublin Education and Training Board's (CDETB) Adult Education Service in South Inner City Dublin. She is also a Hume Scholar and PhD student in Maynooth University, studying teaching and learning approaches to climate justice and climate change in adult education settings.

My name is Ulrich Hoeche.
I am a culinary arts lecturer at the Galway International Hotel School at the Galway-Mayo Institute of Technology based in Galway, Ireland. This position not only gives me the opportunity to pass on my knowledge, but it also allows me to inspire future chefs and ignite their passion for the culinary craft, an area full of creativity and one of the very few professions which allows you to use all your senses. I also have a very keen interest in nature, foraging, and preserving the seasons, which I use to get culinary students interested in the natural world that surrounds them and the wild edible foods that grow within. The workshop will explore local seasonal wild foods such as, seaweed, seashore plants, herbs, flowers, and some wild mushrooms pending availability this time of year. The workshop will also give some insights on the preservation of those wild foods to not only extend shelf life, but to maximise flavour retention, through gentle processing. Methods include low temperature dehydration, hot and cold infusion as well as pickling to preserve the Aromas and Flavours of the wild and rugged Connemara Landscape. |
