Meet the Authors: Ursula Donovan & Brian Murphy
Ursula Donovan lectures in the Technological University Dublin in the area of Hospitality Studies. She holds an MA in Education and is a graduate of the BA Hospitality Programme from GMIT. She has extensive management experience of the hotel sector and has consulted on training needs for organisations such as the Irish Accommodation Services Institute (IASI) and Fáilte Ireland. In 2010, Ursula completed a CPD program in Restaurant Management at the Ferrandi Ecole Paris where she experienced first-hand the different educational approaches taken by French institutions in terms of hospitality training. She currently lectures in Food and Beverage Studies, Front Office, HRM and Communications. Following significant involvement in student placement and assessment, Ursula is keen to develop research in the “coaching and mentoring” area and to explore how it might be applied to hospitality education.
Brian J Murphy lectures in the area of food and drink culture in the School of Culinary Arts and Food Technology at the Technological University Dublin. He also works closely with the National Centre for Franco-Irish Studies, a research centre based in TU Dublin and is keen to explore curriculum linkages between the French education system and the Irish third level environment. He has published and presented on a number of areas including the role of “place and story” in contemporary food and drink culture and the integration of language skills into practical hospitality environments.

Meet the Authors: Dr Róisín M. Burke & Pauline Danaher
Roisin Burke obtained her Ph.D. from University College Dublin and subsequently carried out postdoctoral research at the Agricultural University in Wageningen, The Netherlands. She is a Senior Lecturer in the Technological University, Dublin (TU Dublin), specialising in Culinary Science and Food Product Development. In the last fourteen years she has developed Molecular Gastronomy as a subject discipline in The School of Culinary Arts and Food Technology, TU Dublin. She supervised the first ever Ph.D. in Molecular Gastronomy in Ireland and is currently supervising a number of funded Ph.D. students. Roisin initiated and together with her TU Dublin colleagues developed a B.Sc. (Hons) in Culinary Science which was launched in 2016. She has published widely in international peer reviewed journals and has joined editorial teams. For many years, Roisin is lecturing to international students and is the TU Dublin co-ordinator of the Erasmus+ M.Sc. programme in Food Innovation and Product Design (FIPDes ; fipdes.eu). She has given guest lectures in Ireland and abroad.

Pauline Danaher has been a member of staff for 23 years. In this time she have been activity involved in the School's promotional work. Pauline has been involved in the BA in Culinary Arts for numerous years serving as a year tutor to all the years on this degree. She was very involved in the setting up of the degree in Culinary Science from the beginning and seeking industry approval. These degrees have delivered fantastic students to the food industry both National and Internationally. completed her Masters in Culinary Innovation and Food Product Development in 2012. Pauline now teaches on the Master's degree in Food Product Development and Molecular Gastronomy. Pauline has been mentoring students on the Culinary teams entering National and International cooking competitions with huge success. Pauline has completed numerous course in advancing her culinary knowledge such as sous vide cookery, Indian cookery, molecular cooking and fish mongery. In teaching Pauline uses a lot of different methods such as Problem Based learning, research based projects on food related topics with particular interest in local produce, portfolio work, site visits, interactive workshops, interactive debates. Pauline along with a colleague developed an innovative food memory themed icebreaker and food related mystery tour for incoming first year's.
Pauline has published papers in the area of culinary text books, molecular gastronomy and has presented papers at many international food conferences. Pauline mentors students in national and international culinary competitions and molecular cooking competitions.

Meet the Author: Dr Eamon Maher
Eamon Maher is Director of the National Centre for Franco-Irish Studies in TU Dublin. He has published 2 monographs, an edited collection and numerous articles on the work of John McGahern and is currently overseeing the publication of a book by Paul Butler dealing with image and text in the writer’s representation of Leitrim and Roscommon.

Meet the Author: Marie Tellier
Marie is currently working on her PhD research proposal in the Geography of Food and Rural development, that she will submit at Université Lyon II . Her study shows Irish farmhouse cheeses as an agricultural innovation and how it impacts the social and spatial organization of the rural areas of Ireland. She did her research Masters degree in Geography of Food at La Sorbonne in Paris. During her master thesis, she studied the development of the farmhouse cheese sector in Ireland as an agricultural and cultural innovation. She holds a double degree in History and Geography from Lettres Sorbonne Université and studied History at Trinity College Dublin.

Meet the authors: Christelle Leroy and Christophe Dovergne
Christelle et Christophe sont référents relations internationales.
Ils portent de nombreux partenariats et accords notamment dans les Balkans qui permettent aux collègues, aux élèves et étudiants du lycée de vivre une expérience à l’international. Le lycée a été notamment porteur d’un partenariat stratégique Erasmus 2018-1FR01-KA202-048121 : REVER (Réalisation Européenne Valorisant l’Enseignement en Restauration) impliquant cinq établissements de cinq pays : - Lycée Jessé de Forest, Avesnes sur Helpe, France - GMIT Galway, Irlande, - Profesional Gimnaziya Turisym, Varna, Bulgarie - IES Virgen De La Calle, Palencia, Espagne, - Sugs Lazar Tanev, Skopjee, République de Macédoine du Nord Ce partenariat REVER a permis la création d’un passeport favorisant le placement en stage et l’employabilité. Il reprend les techniques enseignées en cuisine et observées lors des mobilités dans chaque établissement et sont traduites en 6 langues : français, anglais, macédonien, bulgare, espagnol, allemand. L’élève peut avant d’effectuer un stage cocher ce qu’il sait faire et noter après son stage les nouveaux acquis. Ce passeport est un outil simple qui permet aussi aux jeunes diplômés de chercher un emploi en Europe, de se lancer dans l'aventure de la découverte de l'autre, de la rencontre des cultures, en un mot de REVER l'Europe. |

Meet the Author: Catherine Gagneux
Catherine is originally from France (Le Mans) and studied European Business and Logistics in Paris with an ERASMUS year in Dundee (Scotland). She recently completed a MSc In Supply Chain Management with TU Dublin. Having moved to Ireland in 1995, she is now firmly established in Galway and works as a Senior Business Process Analyst. She has been also the French Honorary Consul for Connacht and Donegal since 2015 and represents the French Embassy in those regions helping to promote and strengthen Franco-Irish connections. She is also very engaged in developing and strengthening twinning activities and initiatives between committees in Ireland and in France. Catherine is a strong advocate for supporting and promoting local initiatives with a French ‘je ne sais quoi’ and also has keen interests in music (especially Bach and Debussy), arts and world travel and is a Connacht rugby supporter.
